Need Sun, Will Travel
OK, what happened to all that beautiful sunshine we had just a week ago?!
David Austin roses over the garage. They’re so far up, I can’t reach them to cut any down.
These tissue-paper beauties are gorgeous. If only I could reach one… it’d be lovely on the nightstand.
It’s diggity doggity cold and wet here. Lucky me, by this time tomorrow I should be sippin’ some rum while lounging in a chair on the island of Tortola in the British Virgin Islands.
The forecast: sun, sun and more sun.

So I’ll make this quick; I still need to pack.
I had a girlfriend over for lunch today. I wanted to try my tequila-lime chicken recipe on her, but I couldn’t bring myself to pick up limes from the market when I still had a tree full of Meyer lemons in the yard. So, I did the next best thing; foraged in the garden and made the following modifications:
- sub lime for Meyer lemon
- sub tequila for dry white wine
- sub cilantro for parsley
Today’s RGBistro garden basket: speckled lettuce, Meyer lemon and flat-leaf parsley.
The main course was still good:
Meyer lemon and parsley chicken with shallots and white wine.
And since it was cold today, the first course included asparagus soup, done in true RGBistro-style: market-fresh asparagus + onion from the drawer + thyme from the garden + stock from the freezer + aging red potato and garlic from the counter.
My apologies for the terrible food photos. I didn’t have the heart to make my girlfriend wait ten minutes while I tried to take a billion shots. I’m sure you all know what I’m talkin’ about.

Asparagus and Potato Purée

- 1 bunch asparagus (approx 1 lb.)
- 1 tbsp. olive oil
- 1 medium brown onion
- 2 garlic cloves
- 1 handful thyme (yield ½ tbsp. fresh whole leaves or 1 tsp. dry)
- 1 small red potato
- 4 cups chicken stock
- Grind of salt and pepper
Preparation Time: 45 minutes
Nutrition content per serving: 97 calories, 13g carbs, 3.5g protein, 3.5g fat, 3g fiber
Cost per serving: $ 0.96 – $ 1.46
